Pasta with Tomatoes
Serve as a starter or a main meal
In a large saucepan cook 100 g spaghetti or vermicelli pasta in boiling salted water, about 5 – 6 minutes, before draining. Meanwhile, heat 3 Tablespoons of virgin oil in a small saucepan with 1 clove garlic, peeled and crushed, for about 2 minutes until soft but not brown.
Add 100 g chopped cherry tomatoes, a pinch of salt, and cook for a few more minutes, add a teaspoon of water. Cook until the tomatoes are tender and have a saucy consistency. Add about 10 fresh basil leaves, torn.
Stir the pasta into the sauce, serve with a sprig of basil and drizzle with a little extra virgin olive
