Cucumber Salad Recipe
1 large cucumber
1 clove of garlic
1 quarter teaspoon rock salt
4 ounces of plain yogurt
2 tablespoons fresh mint
Fresh ground pepper for seasoning
Peel and seed the cucumber, and coarsely shred into a colander so any excess liquid drains off as you shred.
Now for the Dressing. Peel the garlic clove and chop coarsely, and sprinkle with the rock salt. Work the salt and garlic into a paste. Mix together the paste, yogurt and mint in your serving bowl. Season with fresh ground pepper.
Finally stir carefully the shredded cucumber into the dressing. Add more seasoning if necessary
Use two small cucumbers instead of one large one
Use dried mint, halve the amount
